Cabbage Salad with Pine Nuts, Raisins, and Parmesan
Ingredients
- Green Papaya 15 oz
- Raisins 2 tablespoons
- Rice Vinegar for Sushi 1 tablespoon
- White Balsamic Cream 7 tablespoons
- Honey 1 tablespoon
- Olive Oil 1 tablespoon
- Salt 1 teaspoon
- Pistachios 2 tablespoons
- Parmesan Cheese to taste
Step-by-Step Guide
Step 1
Place the raisins in a bowl and pour 5 tablespoons of balsamic vinegar over them. Leave overnight. Drain.
Step 2
In a large bowl, mix the remaining 2 tablespoons of balsamic vinegar, rice vinegar, honey, oil, and salt. Add the chopped cabbage, raisins, and nuts. Toss well and let sit at room temperature for 20 minutes, stirring occasionally. Season with salt and pepper. Before serving, sprinkle with shaved Parmesan.
