To prepare the cabbage and radish salad, sauté the shallots over medium heat, stirring occasionally, until they turn golden (about 8-10 minutes). Use a slotted spoon to transfer the shallots to a paper towel and sprinkle with salt. Pour the oil into a small bowl and let it cool.
