Description
The name comes from the Spanish word 'burro' which means 'donkey'. There is a legend that the dish was named after a Mexican named John Mendoza, who was nicknamed 'Little Donkey'. Mendoza sold food at the border of Mexico and Texas, saving on dishes and selling meat with vegetables not in a ceramic pot, but wrapped in a tortilla. A burrito is made from a wheat tortilla that wraps ingredients such as chopped meat, beans, cheese, tomatoes, rice, avocado, sour cream, or chili-based salsa.
Ingredients
- Onion 1 head
- Canned Baby Beets 5 oz
- Garlic 1 clove
- Mild Chili Spice ¼ spoons
- Ground Cumin a pinch
- Lime Juice to taste
- Cilantro 0 oz
- Lean Beef 15 oz
- Cheese Spread 5 oz
- Vegetable Oil 5 fl oz
- Tomatoes 2 pieces
- Tortillas 6 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the oil in a skillet.
Step 2
Sauté the chopped onion in it for 5–8 minutes until softened.
Step 3
Add cumin and chili to the onion, press in the garlic using a garlic press, and sauté for 30 seconds. Then add the drained beans and half a cup of water, stir, cover with a lid, and simmer for 5 minutes.
Step 4
Remove the lid and mash the beans with a potato masher. There's no need to turn the beans into a smooth puree; just mash about half of them. Continue to simmer for another 3 minutes, stirring constantly.
Step 5
Remove the beans from heat, season with salt, add chopped cilantro and lime juice.
Step 6
In a clean skillet, heat the oil and sauté the ground meat for 5 minutes.
Step 7
Add the beans and sauté, stirring, for another 2 minutes. Finally, season with salt to taste.
Step 8
Heat the tortilla in a dry skillet for 30 seconds on each side.
Step 9
On a warm tortilla, layer shredded cheese, meat with beans, and diced tomatoes. Fold in the top and bottom ends of the burrito, then roll it up.
