Bulgur Salad with Vegetables and Feta
Ingredients
- Bulgur ½ cup
- Red Bell Pepper 1 piece
- Cherry Tomatoes 5 oz
- Sun-Dried Tomatoes 0 oz
- Feta cheese 5 oz
- Cilantro 1 tablespoon
- Mint 1 tablespoon
- Chives 1 tablespoon
- Olive Oil 2 tablespoons
- Lemon Juice 2 tablespoons
- Salt a pinch
- Ground red pepper to taste
Step-by-Step Guide
Step 1
Cook the bulgur in boiling salted water until ready (20 minutes).
Step 2
Drain the water and let it cool.
Step 3
Cut the cherry tomatoes in half and dice the bell pepper.
Step 4
Crumble the cheese.
Step 5
Mix the bulgur with the pepper, herbs, tomatoes, olive oil, and lemon juice, seasoning with pepper and salt to taste.
Step 6
Top with crumbled cheese, lightly pepper it, and drizzle with olive oil.
Step 7
You can add 1-2 finely chopped cloves of garlic to the salad.
