Bulgur Salad

Ingredients

  • Bulgur 5 oz
  • Tomatoes 2 pieces
  • Leek 2 pieces
  • Fresh Mint 1 bunch
  • Parsley 1 bunch
  • Olive Oil 3 tablespoons
  • Passata Tomato Sauce 1 tablespoon
  • Lemon 1 piece
  • Paprika 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Cook the bulgur according to the package instructions (for example, you can use 'Platinum Market').

Step 2

While the bulgur is cooking (about 10 minutes), place the tomatoes in boiling water for 2 minutes, making a cross-shaped cut on top beforehand. Remove from water and peel the skin.

Step 3

Finely chop the leek, and cut the tomatoes into small cubes.

Step 4

Chop the parsley and mint, and squeeze the juice from the lemon.

Step 5

In a pot with the cooked bulgur (drain the water beforehand), mix in the olive oil, leek, herbs, tomatoes, tomato paste, lemon juice, salt, pepper, and paprika.

Step 6

The salad is good not only immediately after preparation but also after it has been refrigerated overnight.
