Broccoli Salad with Honey and Mustard
Ingredients
- Black Lentils 5 oz
- Broccoli florets 4 pieces
- Shallot 1 head
- Roasted Almonds 5 oz
- Olive Oil 4 tablespoons
- Apple Cider Vinegar 1 tablespoon
- Honey 2 teaspoons
- Dijon Mustard 2 teaspoons
Step-by-Step Guide
Step 1
For the salad: rinse the lentils and place them in a pot with 1 cup of water.
Step 2
Bring to a boil, reduce heat to medium, and let simmer for 18 minutes.
Step 3
Add the broccoli, cover with a lid, and let steam for 2-3 minutes until the broccoli is al dente.
Step 4
At the same time, prepare the honey and mustard dressing: mix the ingredients in a bowl until smooth.
Step 5
Drain excess liquid from the pot, and transfer the lentils and broccoli to a large bowl.
Step 6
Add the dressing, mix while shaking the bowl. Season with salt and pepper to taste. Serve with shallots and almonds.
