Ingredients

  • Broccoli 25 oz
  • Garlic 1 clove
  • Spanish onions 5 oz
  • Dried cranberries with sugar 6 teaspoons
  • Cress salad 2 bunches
  • Red Wine Vinegar 0 fl oz
  • Honey 0 oz
  • Salt to taste
  • White Pepper (whole) to taste

Step-by-Step Guide

Step 1

Wash the broccoli and cut it into florets. Steam for about four minutes, then rinse under cold water and drain in a colander. The broccoli should be tender yet still slightly crisp.

Step 2

In a large bowl, combine vinegar, honey, and minced garlic, and season with salt and pepper.

Step 3

Thinly slice the onion and add it to the bowl with the sauce, then add the dried cranberries. Let it sit for half an hour to allow the onion to soften.

Step 4

Rinse the watercress, trim the thick stems, and add it along with the broccoli to a bowl with the onion sauce. Gently toss, sprinkle with pepper, and serve.
