Description

Romaine for this dish doesn't need to be braised for too long — just enough to keep it slightly crunchy. It can actually be prepared quickly: sauté it together with slices of bacon in a small amount of butter — and serve it that way.

  • Romaine lettuce 4 pieces
  • Green Peas 5 oz
  • Bacon 4 pieces
  • Shallot 1 head
  • Butter 0 oz
  • Thyme 1 stalk
  • Dry White Wine 0 fl oz
  • 33% Cream 5 fl oz
  • Parsley 0 oz
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Finely dice the shallots. Cut the romaine hearts in half. Slice the bacon into short strips. Chop the parsley finely.

Step 2

Melt the butter in a saucepan, add the shallots, and sauté for one minute until translucent.

Step 3

Add the bacon and cook for another two minutes.

Step 4

Add the romaine lettuce, green peas, and thyme. Season with salt and pepper. Pour in the wine, bring to a boil, cover with a lid, and cook for two minutes over medium heat.

Step 5

Add the cream, bring to a boil, and simmer for another minute.

Step 6

Remove the saucepan from the heat, sprinkle the sautéed salad with parsley, and immediately call everyone to the table.
