
Blueberry Nights Sandwich

Description
You can use either fresh or frozen blueberries for the jam, and in general, this recipe is versatile and suitable for any berries.
Ingredients
- Fresh Berries 10 oz
- Sugar 5 oz
- Rosemary 2 sprigs
- Semi-soft cream cheese 5 oz
- Camembert cheese 5 oz
- Brioche 4 pieces
Step-by-Step Guide
Step 1
Wash the fresh berries, remove leaves and stems, and place them in a saucepan. Frozen berries can be transferred directly to the saucepan without thawing.
Step 2
Add sugar and rosemary sprigs. Simmer over medium heat, stirring occasionally, until thickened. This process will take about 1.5 to 2 hours.
Step 3
Toast the brioche pieces on a dry skillet on both sides.
Step 4
Spread melted or cream cheese on each half.
Step 5
On one half, melt pieces of Camembert. To do this, place 3–4 pieces of cheese on the bun, cover with parchment paper, flip over, and cook for a couple of minutes on the skillet. You can also melt the cheese using a press grill, a torch, or even a microwave or oven.
Step 6
On the second half, spread 3 tablespoons of blueberry jam.
Step 7
Once the Camembert has melted, remove the parchment and cover the bun with the second half with jam.
Step 8
Cut into two pieces and serve hot, adding a small bowl of jam on the plate for dipping the bread ends. It pairs very well with a cup of brewed coffee.
