Ingredients

  • Fresh Spinach Leaves 10 oz
  • Extra virgin olive oil 6 tablespoons
  • Red Onion 1 head
  • Garlic 2 cloves
  • Dried Oregano ½ teaspoon
  • Salt ½ teaspoon
  • Ground Black Pepper ½ teaspoon
  • Sugar ¼ teaspoon
  • Lemon Juice 2 tablespoons
  • Feta cheese 5 oz
  • Kalamata olives 0 oz

Step-by-Step Guide

Step 1

Finely chop the red onion and garlic, crumble the feta. Thinly slice the olives after removing the pits.

Step 2

Place the spinach in a large bowl. Heat the oil in a small pan over medium heat and add the onion, garlic, oregano, salt, pepper, and sugar. Sauté for about 3 minutes until the onion becomes soft.

Step 3

Remove from heat, add the lemon juice, and then immediately pour the contents of the pan over the spinach and mix. Serve the spinach on individual plates, topped with feta and olives.
