Black-Eyed Pea Salad
Ingredients
- Freshly squeezed orange juice 0 fl oz
- Parsley ½ bunches
- Vegetable Oil 1 glass
- Green Peas 4½ glasses
- Scallions 4 stalks
- Orange Bell Peppers 1 piece
- Tomatoes 1 piece
- Cucumbers 1 piece
- Habanero Pepper 1 piece
- Coarse Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cook the beans until tender, drain in a colander, dry them off, and let them cool.
Step 2
In a bowl, mix lime juice, coarsely chopped parsley, and gradually pour in vegetable oil, whisking until smooth. Add the beans, chopped green onions, finely diced bell pepper, peeled and seeded chopped tomato, and peeled and finely diced cucumber.
Step 3
Remove the seeds from the chili pepper, finely chop it, and add it to the bowl as well. Add salt and black pepper, mix well, and let it sit for an hour (or better yet, refrigerate overnight). Serve cold or at room temperature.
