Description

This salad uses small black lentils, which are referred to as beluga due to their resemblance to caviar.

Ingredients

  • Cilantro to taste
  • Garlic 4 cloves
  • Olive Oil to taste
  • Ground ancho chili pepper 1 piece
  • Spanish onions 3 heads
  • Black Beluga Lentils 10 oz
  • Goat cheese 5 oz
  • Honey 1 tablespoon
  • Pumpkin 5 oz
  • Balsamic Vinegar to taste

Step-by-Step Guide

Step 1

Rinse the lentils, cover them with cold water, and cook for about 20 minutes until al dente.

Step 2

Rinse with cold water, mix with finely chopped red onion and cilantro.

Step 3

Make a dressing from olive oil, balsamic vinegar (mix balsamic with olive oil in a ratio of 1 to 3), minced garlic, and chili pepper, add salt and a mix of ground peppers.

Step 4

Cut the goat cheese into small sticks.

Step 5

Gently mix the beluga lentils with the dressing and cheese by hand.

Step 6

Garnish with pickled pumpkin.

Step 7

Prepare crispy onions — lightly dust onion rings with flour and fry them.

Garnish the salad.
