Black Bean Salad with Corn and Bell Pepper
Ingredients
- Chopped Cilantro 2 tablespoons
- Frozen Corn 2 cups
- Red Bell Pepper 1 piece
- Black Beans 15 oz
- Lime Juice 2 tablespoons
- Mirin 1 tablespoon
- Olive Oil 2 tablespoons
- Ground Cumin ¼ teaspoon
- Salt to taste
Step-by-Step Guide
Step 1
Boil the corn or roast it in the oven.
Step 2
Remove the kernels from the cob.
Step 3
In a large bowl, mix lime juice, bell pepper, jicama, and black beans.
Step 4
In a small bowl, combine lime juice, mirin, olive oil, cilantro, cumin, and salt.
