Belarusian Carrot Salad
Ingredients
- Carrot 15 oz
- Apple Cider Vinegar 2 tablespoons
- Salt 1 teaspoon
- Cilantro 2 teaspoons
- Peanut Butter 2 tablespoons
- Onion 1 piece
- Garlic 3 cloves
- Red Long Chili Peppers to taste
Step-by-Step Guide
Step 1
Grate the carrot on a fine grater, pour in the vinegar, and add salt. Mix thoroughly.
Step 2
Cover with plastic wrap and refrigerate for 3 hours. Drain the liquid.
Step 3
Toast the coriander seeds in a skillet over medium heat for 2 minutes. Crush them in a mortar.
Step 4
In the same skillet, heat olive oil and sauté the onion.
Step 5
Cool and strain, then pour the oil into the carrots. The onion will not be needed anymore.
Step 6
Season the carrots with coriander, garlic, and ground red pepper. Mix and serve.
