Ingredients
- Yellow Beets 2 pieces
- Mustard Greens 5 oz
- Meyer Lemon Juice 5 tablespoons
- Apple 1 piece
- Radish 5 oz
- Daikon 5 oz
- Celery salt 1 piece
- Pickled Cauliflower 5 oz
- Cucumbers 5 oz
- Cauliflower 5 oz
- Fresh Berries 0 oz
- Cranberry 0 oz
- Pistachios 0 oz
- Salt to taste
- Olive Oil 5 fl oz
- Herbs 0 oz
- Champagne Vinegar 2 tablespoons
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the boiled beets into strips, chop the beet greens, and marinate for 1 hour with lemon juice.
Step 2
Cut the carrot and peeled apple, radish, daikon, and celery root into strips.
Step 3
Grate the fresh and pickled cucumbers on a coarse grater.
Step 4
Separate the cauliflower into florets and boil in salted water.
Step 5
Combine all the vegetables. Add the cranberries and blueberries.
Step 6
Toast the pine nuts in a dry skillet and add to the salad.
Step 7
Dress the salad. For the dressing, whisk together olive oil and wine vinegar. Add chopped herbs, salt, and pepper.
