- Beetroot 3 pieces
- Olive Oil 0 fl oz
- Goat cheese 5 oz
- Arugula 5 oz
- Spanish onions 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Balsamic Vinegar 1 tablespoon
Step-by-Step Guide
Step 1
Peel the onion and slice it into thin half-rings.
Step 2
Peel the beetroot, slice it, dip it in olive oil, place it on a baking tray, cover with foil, and bake in a preheated oven at 390°F.
Step 3
Mix the beetroot and onion. Add the arugula leaves and goat cheese. Dress the salad. For the dressing, whisk together olive oil and balsamic vinegar. Add salt and pepper to taste.
