Ingredients
- Yellow Beets 3 pieces
- Goat cheese 5 oz
- Pistachios 5 oz
- Balsamic Vinegar 2 tablespoons
- Olive Oil 3 tablespoons
- Fresh Mint 1 bunch
Step-by-Step Guide
Step 1
Boil the beets.
Step 2
Then cut them into large cubes.
Step 3
Cut (or crumble) the goat cheese.
Step 4
Mix the cheese with the beets, drizzle with olive oil, sprinkle the nuts on top, and add the balsamic dressing.
Step 5
Serve in a deep salad bowl, garnished with a sprig of fresh mint on top.
