  • Beetroot 1 piece
  • Arugula 1 bunch
  • Goat cheese to taste
  • Olive Oil to taste
  • Meyer Lemon Juice ½ teaspoon
  • Salt to taste
  • White Pepper (whole) a pinch

Step-by-Step Guide

Step 1

Boil the beetroot (1 hour). To save time, this can be done in advance. Peel and slice thinly.

Step 2

Wash and dry the arugula. Add finely chopped onion and beetroot.

Step 3

Season with salt and pepper, and dress with olive oil and lemon juice.

Step 4

Finally, add the goat cheese.
