Ingredients
- Mustard Greens 5 oz
- Tofu 5 oz
- Young zucchini 1 piece
- Fresh Berries 5 oz
- Avocado 1 piece
- Honey 1 tablespoon
- Soy Sauce 3 tablespoons
Step-by-Step Guide
Step 1
Wash the beet greens, dry them with a towel, and place them in a bowl.
Step 2
Cut the tofu into small cubes (Silken firm tofu works best for this salad).
Step 3
Peel the avocado, cut it in half lengthwise, remove the pit, and chop each half into slices about 1.5 - 2 mm thick.
Step 4
Peel the zucchini and cut it into thin strips resembling noodles.
Step 5
Add the blueberries and drizzle with the honey soy mixture.
