Ingredients
- Orange juice concentrate 0 fl oz
- Olive Oil 0 fl oz
- Red Wine Vinegar 0 fl oz
- Coarse Salt to taste
- Dijon Mustard 0 fl oz
- Ground Black Pepper to taste
- Yellow Beets 20 oz
- Turnips 2 pieces
Step-by-Step Guide
Step 1
In a large bowl, combine the orange juice, olive oil, vinegar, and mustard. Season with salt and pepper.
Step 2
Trim the greens from the beets, remove the stems, and thinly slice the leaves.
Step 3
Peel and grate the beets. Transfer them to a colander and rinse under cold water, then dry. Add to the bowl with the dressing, along with the sliced leaves.
Step 4
Peel and grate the carrots. Add them to the beets. Toss and let sit for 15 minutes.
