Bean, Barley, and Mint Salad
Ingredients
- Vegetable Broth 0 qt
- Beans 20 oz
- Barley 10 oz
- Mint Leaves 0 oz
- Radishes 5 oz
- Hazelnuts 5 oz
- Goat cheese 5 oz
- Olive Oil 4 tablespoons
- Wine Vinegar 1 tablespoon
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
Step-by-Step Guide
Step 1
Bring the broth to a boil.
Step 2
Add the beans and cook for 3 minutes. Use a slotted spoon to transfer them to a bowl and immerse in cold water. Peel if desired.
Step 3
Add the barley to the broth and cook for 40-45 minutes until done. Drain, mix, add the mint leaves, and let cool.
Step 4
For the dressing, mix all the ingredients and add to the barley.
Step 5
Serve on a large platter or portion out with radishes, nuts, and goat cheese.
