Barley Salad with Cherry Tomatoes, Mozzarella, and Basil
Ingredients
- Pearl barley 1½ cups
- Marinated cherries 15 oz
- Pizza Mozzarella Cheese 5 oz
- Fresh basil leaves 3 tablespoons
- Olive Oil ¼ cup
- Red Wine Vinegar 4 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Mixed salad greens to taste
Step-by-Step Guide
Step 1
Cook the barley in boiling water until tender, about 30 minutes. Drain and rinse under cold water.
Step 2
In a bowl, combine diced mozzarella (cut to the size of cherry tomatoes), halved cherry tomatoes, chopped basil, and barley.
Step 3
Add olive oil and vinegar. Season with salt and pepper.
Step 4
On plates, arrange the salad greens, top with the salad, and serve.
