Our answer to the Mediterranean Niçoise salad: potatoes, tomatoes, quail eggs, greens, capers, and fish — in this case, sprats.
Ingredients
- Salad Potatoes 2 pieces
- Cucumbers 2 pieces
- Marinated cherries 6 pieces
- Olives stuffed with lemon to taste
- Green Butter 2 bunches
- Ground Black Pepper to taste
- Salt to taste
- Olive Oil 5 fl oz
- Malt Vinegar 1 tablespoon
- Sprats 5 oz
- Quail Egg 5 pieces
Step-by-Step Guide
Step 1
Boil the potatoes and quail eggs. Cool down. Peel. Cut the potatoes and cucumbers into cubes, and halve the eggs and tomatoes.
Step 2
Open the sprats, draining the oil.
Step 3
In a salad bowl, mix the salad greens, olives, chopped eggs, and vegetables. Season with salt and pepper, and dress with the olive-oil vinegar dressing. Add the sprats and gently mix.
