Avocado, Spinach, and Grapefruit Salad with Poppy Seeds, Pomegranate Seeds, and Sunflower Seeds
Ingredients
- Sunflower Seeds 1½ tablespoons
- Poppy seed paste 1 teaspoon
- Avocado 1 piece
- Pomegranate Seeds ½ cup
- Red Grape Juice 10 oz
- Sugar 2 tablespoons
- Raspberry leaves 1½ tablespoons
- English Dry Mustard ¼ teaspoon
- Salt 0.1 teaspoons
- Vegetable Oil 1 tablespoon
- Fresh basil leaves 5 oz
- Lime ½ piece
Step-by-Step Guide
Step 1
Peel the avocado, cut it in half, and slice it into pieces about 1 cm thick. Drizzle with juice from half a lime and gently toss.
Step 2
Peel the red grapefruit, removing the skin and the white membranes from the segments. Cut the grapefruit flesh into slices (about 2 cm).
Step 3
Divide the fresh spinach leaves into about 6 equal portions and place them at the bottom of 6 plates. Top with slices of avocado and grapefruit.
Step 4
In a small bowl, whisk together the sugar, raspberry vinegar, dry mustard, and salt. Once the sugar is fully dissolved, gradually add the canola oil while continuing to whisk.
Step 5
Drizzle the salad with the prepared dressing. Sprinkle sunflower seeds and poppy seeds on top. Finish by adding pomegranate seeds to the salad.
