Avocado, Grapefruit, and Pomegranate Seed Salad
Ingredients
- Mixed salad greens 5 oz
- Endive 1 head
- Radicchio Salad ½ bunch
- Eel 1 head
- Avocado 2 pieces
- Red Grape Juice 1 piece
- Chinese green beans 5 oz
- Red Grape Juice ¼ cup
- Pomegranate Seeds ½ cup
- Dijon Mustard 1 teaspoon
- Sugar a pinch
- Coarse Salt to taste
- Ground Black Pepper to taste
- Olive Oil ¼ cup
Step-by-Step Guide
Step 1
Boil the green beans in salted boiling water until tender. Drain and rinse under cold water. Cut into pieces.
Step 2
In a large bowl, combine the greens and salad leaves. Add the peeled and diced avocado and green beans.
Step 3
Peel the grapefruit and cut out the segments with a sharp knife. Squeeze out the remaining juice.
Step 4
For the vinaigrette, mix the grapefruit juice, mustard, sugar, salt, and black pepper in a bowl. Add the diced grapefruit segments and incorporate the olive oil.
Step 5
Drizzle the vinaigrette over the salad and gently toss. Serve on plates and sprinkle with pomegranate seeds.
