Autumn Vegetable Sandwiches
Ingredients
- Courgette 2 pieces
- Eggplants 1 piece
- Tomatoes 3 pieces
- Onion 1 head
- Carrot 1 piece
- Sugar to taste
- Passata Tomato Sauce 3 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 2 tablespoons
- Cheese Spread 1 piece
- Country Bread 2 slices
- Fresh basil leaves to taste
Step-by-Step Guide
Step 1
Thoroughly wash the vegetables. Slice the eggplant into rounds (thicker than 0.5 cm but less than 1 cm). Soak in salted cold water.
Step 2
Peel the zucchini and slice it into rings of similar thickness to the eggplant. If the zucchini is young, you can leave the seeds; if they are mature or a specific variety with large seeds, carefully scoop out the flesh (cutting a pentagon shape with a knife is the easiest). Place the rings on a plate and sprinkle with salt.
Step 3
Cut the tomatoes into rounds the same thickness as the eggplant. Dice a few rounds and set the rest aside.
Step 4
Grate the carrot on a coarse grater and dice the onion. In a heated skillet, sauté the carrot, onion, and diced tomatoes for 10 minutes.
Step 5
Preheat the oven to 390°F. Dilute the tomato paste with a small amount of water (to make it resemble very thick tomato juice), season with salt, pepper, and add sugar. Pour the sauce over the carrot, onion, and tomatoes and mix. This mixture will be used to flavor the vegetables.
Step 6
In a baking dish, layer the vegetables: a layer of zucchini rounds, a layer of eggplant rounds, then a teaspoon of sauce on each stack, followed by more zucchini, tomatoes, and sauce... Sprinkle with freshly ground pepper, cover with foil, and place in the oven. After 50 minutes, the vegetable appetizer and filling will be ready.
Step 7
Toast the slices of bread in a toaster. On one half, place a portion of vegetables, sprinkle with crushed basil, then add a slice of cheese — and cover with the other half of the bread. If the stack of vegetables is too high, you can divide it into 2. Place in the microwave for 30 seconds.
