- Sesame Seeds 1 teaspoon
- Asparagus 5 oz
- Peas 0 oz
- Zucchini 5 oz
- Olive Oil 1 teaspoon
- Arugula 0 oz
- Feta cheese 0 oz
- Lemon Zest ½ tablespoon
Step-by-Step Guide
Step 1
Heat a small skillet and add the sesame seeds. Toast the seeds until they are golden, then transfer to a plate.
Step 2
Boil the asparagus for 3-4 minutes until almost tender. Transfer to a bowl of ice water to cool, then drain and wrap in a kitchen towel to dry.
Step 3
Cook the peas in boiling water from the asparagus for 3 minutes, then drain and cool under cold running water.
Step 4
Slice the zucchini diagonally into pieces about 0.5 cm thick.
Step 5
Heat the skillet. Sauté the asparagus and zucchini in the oil. Cut the asparagus into strips about 5 cm long.
Step 6
Combine the asparagus, zucchini, peas, arugula, feta cheese, and lemon zest. Sprinkle with black pepper and sesame seeds before serving.
