Asian Chicken Salad
Ingredients
- Onion 1 piece
- Garlic 1 clove
- Ginger 2 teaspoons
- Ground coriander 1 teaspoon
- Ground Cumin 1 teaspoon
- Garam Masala 1 teaspoon
- Mild Chili Spice ½ teaspoon
- Turmeric ½ teaspoon
- Olive Oil 4 tablespoons
- Skin-On Chicken Breasts 4 pieces
- Cilantro 1 tablespoon
- Lemon ½ piece
- Eel 5 oz
- Mango 1 piece
- Orange Bell Peppers 1 piece
Step-by-Step Guide
Step 1
Combine finely chopped small onion, crushed garlic, all spices except fresh cilantro, mild chili, 2 tablespoons of oil, and 2 tablespoons of water in a food processor. Place the skinless, boneless chicken in a bowl with the marinade. Cover and refrigerate for 4 hours.
Step 2
Preheat the grill. Remove the chicken from the marinade and place it on a baking sheet. Grill for about 10–15 minutes, turning occasionally. Slice into strips.
Step 3
Mix the remaining oil, finely chopped cilantro, and the juice of half a lemon. Season to taste. Place the lettuce in a bowl, drizzle with the dressing, and toss. Add the chicken, sliced mango, and diced red bell pepper, drizzle with the remaining dressing, and serve.
