Ingredients
- Arugula 0 oz
- Meyer Lemon Juice to taste
- Olive Oil to taste
- Seafood cocktail 10 oz
- Cucumbers 2 pieces
- Pitted olives 5 oz
Step-by-Step Guide
Step 1
Cut the cucumbers into strips and tear the arugula by hand.
Step 2
Drain excess liquid from the seafood cocktail. I used a ready-to-eat, non-frozen cocktail.
Step 3
Cut the olives in half.
Step 4
Mix the cucumbers, seafood, olives, and arugula. Season with salt and pepper.
Step 5
Combine lemon juice and olive oil. Dress the salad.
