Arugula Salad with Pears and Walnuts
Ingredients
- Shallot 1 head
- Chicken Broth 3 tablespoons
- Olive Oil 3 tablespoons
- Dijon Mustard ½ teaspoon
- Balsamic Vinegar 1½ tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Chopped almonds 5 oz
- Bartlett Pear 2 pieces
- Banana Leaves 10 oz
- Arugula 10 oz
Step-by-Step Guide
Step 1
In a small bowl, mix finely chopped shallot, broth, olive oil, balsamic vinegar, mustard, and a little salt and pepper.
Step 2
Heat a skillet over medium heat and toast the walnuts until golden, about 2–3 minutes. Transfer to a bowl and let cool.
Step 3
Cut the pears into small pieces and place them in a bowl. Add a tablespoon of the dressing and mix well. Add torn lettuce leaves and arugula, drizzle with the remaining dressing, and gently toss.
Step 4
Sprinkle with walnuts and serve.
