Arugula salad with peaches, grapes, and feta
Ingredients
- Olive Oil 1 tablespoon
- Coarse Salt to taste
- Meyer Lemon Juice 1 teaspoon
- Donut Peaches 1 piece
- Seedless Green Grapes 5 oz
- Arugula 1 bunch
- Feta cheese ½ cup
Step-by-Step Guide
Step 1
In a large bowl, mix the olive oil and lemon juice.
Step 2
Rinse the arugula well and dry it. Transfer to the bowl with the dressing and toss. Season with salt and toss again. Plate the salad.
Step 3
Slice the peach thinly and arrange it on top of the arugula.
Step 4
Cut the grapes in half and add them to the salad.
Step 5
Sprinkle with feta cheese on top and serve immediately.
