Ingredients
- Manchego cheese 5 oz
- Walnuts 5 fl oz
- Balsamic Vinegar ½ cup
- Arugula 20 oz
- Champagne Vinegar 3 tablespoons
- Pickled Apples 2 pieces
- Pitted olives 10 oz
- Walnuts 5 oz
- Shallot 4 pieces
Step-by-Step Guide
Step 1
Pour the balsamic vinegar into a saucepan and place it over medium heat for about 4 minutes, until the volume reduces to 0.25 cup.
Step 2
In a bowl, mix the white wine vinegar and walnut oil. Season with salt and pepper.
Step 3
In a large bowl, combine the arugula, chopped apples, half of the cheese, finely chopped dates, walnuts, and minced shallots. Drizzle with the prepared vinaigrette and mix well.
Step 4
Arrange the salad in the center of the plates and drizzle balsamic syrup around it. Sprinkle with the remaining cheese on top.
