Arugula Salad with Corn and Bacon

Ingredients

  • Corn Cobs 4 pieces
  • Arugula 5 oz
  • Bacon 4 slices
  • Chopped Green Onions 0 oz
  • Olive Oil 1 tablespoon
  • Champagne Vinegar 1 tablespoon
  • Ground Cumin 0.1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Prepare the corn by boiling it in boiling water for 12–15 minutes, or grilling it. Cool and carefully cut the kernels off with a sharp knife.

Step 2

Heat a skillet well and fry the finely chopped bacon until golden brown. Transfer to a plate and let cool.

Step 3

In a bowl, mix the chopped arugula, corn, bacon, and chopped onion.

Step 4

In another bowl, combine the olive oil, vinegar, cumin, and a little salt and pepper. Mix well and dress the salad.
