Arugula salad with cherry tomatoes and croutons
Ingredients
- Arugula 1 bunch
- Marinated cherries 8 pieces
- Grated Pecorino Pepato Cheese 2 tablespoons
- White bread 2 slices
- Toasted Sesame 1 tablespoon
- Olive Oil 4 tablespoons
- Salt a pinch
- Balsamic Vinegar 1 tablespoon
- Quail Egg 6 pieces
Step-by-Step Guide
Step 1
Wash and thoroughly dry the arugula (preferably in a salad spinner)
Step 2
Make croutons in the oven (cut the crustless bread into cubes and bake for 5-8 minutes at 390°F)
Step 3
Wash, dry, and cut the cherry tomatoes in half
Step 4
Boil the eggs for 5 minutes, cool them in cold water, peel, and cut in half
Step 5
Prepare the dressing: combine the oil and vinegar, add salt, and mix thoroughly (shake in a small jar)
Step 6
In a bowl, combine the arugula, tomatoes, croutons, sesame seeds, dress, and gently mix
Step 7
Serve in portions on plates, add the eggs, and sprinkle with cheese
