Ingredients
- Arugula 0 oz
- Olive Oil 0 fl oz
- White Balsamic Cream 0 fl oz
- Ocean salt to taste
- Grated Pecorino Pepato Cheese 0 oz
- Olive Oil 0 fl oz
- Tuna 5 oz
- Marinated cherries 0 oz
- Sea urchin roe to taste
Step-by-Step Guide
Step 1
Sort the arugula, removing thick stems. Place it in a bowl and dress with olive oil and salt.
Step 2
Cut the cherry tomatoes in half.
Step 3
Season the tuna with salt and pepper, sear in garlic oil on both sides until medium rare (pink inside), and slice thinly.
Step 4
Grate the cheese into thin slices.
Step 5
Arrange the arugula leaves in the center of a plate, place the sliced tuna around it, drizzle with balsamic glaze, and top with grated cheese and fish roe.
