Arugula and Strawberry Salad
Ingredients
- Canned White Asparagus 25 oz
- Asparagus 25 oz
- Arugula 5 oz
- Strawberry 10 oz
- Fresh basil leaves 1 tablespoon
- Pistachios 2 tablespoons
- Olive Oil 2 tablespoons
- Sugar 5 oz
- White Balsamic Cream 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Break off the tough part of the asparagus stalks. Wash the asparagus and boil it in salted water for 15 minutes. First, add the white asparagus to the water, and after 5 minutes of boiling, add the green asparagus. Remove the cooked asparagus from the water.
Step 2
Wash the strawberries, remove the stems, and cut them in half.
Step 3
Wash the arugula and dry it with a paper towel.
Step 4
Prepare the caramel. In a pan, pour 100 ml of water and white balsamic vinegar, add the sugar, and stir while reducing until thickened. Add the olive oil to the caramel, mix well, then add the basil, and season with salt and pepper to taste.
Step 5
Arrange the arugula on plates, top with asparagus and strawberries. Drizzle the salad with the caramel sauce and let it sit for 30 minutes.
Step 6
Sprinkle the finished salad with pine nuts and add pepper.
