Ingredients

  • Artichoke bottoms 1 piece
  • Arugula 1 bunch
  • Oranges 1 piece
  • Shallot 1 piece
  • Meyer Lemon Juice 2 tablespoons
  • Olive Oil 2 tablespoons
  • Toasted Sesame to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Using a sharp knife, cut off the tough leaves from the artichoke, and cut the stems into 4 pieces. Place them in a bowl and drizzle with lemon juice.

Step 2

Peel the orange and remove the white membranes from the segments over the bowl to catch the juice.

Step 3

Prepare the dressing: chop the shallot, add it to the orange juice and remaining lemon juice. Whisk everything together with the oil, and season with salt and pepper.

Step 4

Arrange the arugula, orange segments, and artichokes on a plate, drizzle with the dressing, and sprinkle with lightly toasted pine nuts.
