  • Orange Bell Peppers 4 pieces
  • Tomatoes 4 pieces
  • Eggplants 4 pieces
  • Mild Chili Spice 1 piece
  • Cilantro 1 bunch
  • Basil 1 bunch
  • Onion 1 head
  • Salt to taste

Step-by-Step Guide

Step 1

Light the fire in the grill. Skewer the vegetables. Also include the chili pepper.

Step 2

Roast them over an open flame until they are charred. If there's enough space, do it all at once; if not, start with the eggplants. When the skin of the vegetables is slightly charred, remove the shashlik from the fire.

Step 3

Before peeling the eggplants, soak them in a mild salt solution for 3-4 minutes to remove bitterness. Peel them.

Step 4

Also peel the charred skin from the chili pepper, bell peppers, and tomatoes.

Step 5

Chop all the peeled vegetables into small pieces.

Step 6

Finely chop the onion, cilantro, and basil.

Step 7

Mix all the vegetables in a bowl or salad dish and add salt to taste. The spicy Armenian vegetable salad is ready to serve. It pairs well with the shashlik that is grilled immediately after on the hot coals.
