
Armenian Couscous Salad with Mushrooms

Couscous quickly becomes luscious when it meets olive oil. To give it a little boost, mushrooms come to the rescue. Recipe from the culinary team of a popular American restaurant.
Ingredients
- Champignons 5 oz
- Couscous 10 oz
- Olive Oil 0 fl oz
- Parsley 1 sprig
- Dill 1 sprig
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Soak the couscous in boiling water in a 1:1 ratio. Cover and let it steep for 2–3 hours.
Step 2
Slice the mushrooms into thick pieces, season with olive oil, salt, and pepper, and let them marinate for 30 minutes.
Step 3
Place the mushrooms in a well-heated skillet along with the marinade, and sauté, stirring, for 7–8 minutes until the liquid from the mushrooms has evaporated and they are golden brown.
Step 4
In a bowl, mix the couscous with the mushrooms.
Step 5
Generously add chopped herbs (parsley and dill) to the salad, drizzle with olive oil, taste, and season with salt and pepper to your liking.
