This smoothie is perfect for slightly overripe apricots that have been sitting in the fridge for a while. You might not want to eat them as they are, but they are ideal for a smoothie. Natural yogurt is needed in this recipe to balance the flavors; otherwise, it can turn out too sweet.

- Pitted Wild Apricots 12 pieces
- Beans 1 piece
- Soy Vanilla Milk 10 fl oz
- Natural Yogurt 5 fl oz
Step-by-Step Guide
Step 1
Remove the pit from the apricots and blend them together with the banana and rice milk (can be substituted with regular milk), yogurt, and banana in a blender on high speed for about 5 minutes.
Step 2
Serve, garnished with young mint leaves and a piece of apricot.
