
Apple Salad

This recipe was shared with us by John Smith, curator of the culinary section of the apple and book festival in Kolomna.
Ingredients
- Green Butter 15 oz
- Semi-soft cream cheese 10 oz
- Antonovka apples 4 pieces
- Butter 0 oz
- Sugar 5 oz
- Pistachios 5 oz
- Frozen black currant puree 5 oz
Step-by-Step Guide
Step 1
Wash the lettuce leaves. Dry and tear them by hand.
Step 2
Place the green mix on a plate.
Step 3
Heat a skillet. Add the pine nuts and lightly toast them.
Step 4
Mash the currants with a fork in a saucepan.
Step 5
Add half of the sugar.
Step 6
Set the saucepan over medium heat and reduce by 30%. Remove from heat and let cool.
Step 7
Dice the apples into small cubes.
Step 8
In the skillet, melt the butter. Add the remaining sugar.
Step 9
Add the apples to the sugar and lightly caramelize.
Step 10
Transfer the apples to the plate with the greens.
Step 11
Sprinkle with pine nuts.
Step 12
Add the cream cheese.
Step 13
Dress with the currant sauce.
Step 14
Serve.
