Ingredients
- Pearl barley 1 cup
- Water 2½ cups
- Chopped Sage Leaves ¼ cup
- Fresh Mint 0 oz
- Green Apples 1 piece
- Pickled Apples 1 piece
- Meyer Lemon Juice 2 tablespoons
- Apple juice with pulp 2 tablespoons
- Malt Vinegar 2 tablespoons
- Olive Oil 1 tablespoon
- Honey 2 teaspoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Toast the barley in a dry skillet until golden brown.
Step 2
Add water, cover, and cook on low heat until done (25–30 minutes).
Step 3
Drain excess liquid, let the barley cool, then add chopped mint, parsley, and apples.
Step 4
Mix lemon juice, apple juice, oil, vinegar, and honey, and dress the salad with the mixture.
