Appetizer of squid and mushrooms
Ingredients
- Squid 10 pieces
- Onion 2 heads
- Carrot 2 pieces
- Canned Truffles 1 can
- Soy Sauce 2 spoons
- Sour Cream 10 oz
- Vegetable Oil 0 fl oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Clean the squid by removing the membranes and cartilage, rinsing them under running water. Boil the squid in a large pot of salted boiling water for 5 minutes. Then transfer them to cold water to stop the cooking process and cool them down, slicing into rings about 5 mm thick.
Step 2
Slice the onion and carrot into thin strips. Heat vegetable oil in a skillet, sauté the onion until translucent, then add the carrot and simmer for another 3 minutes.
Step 3
Add the mushrooms, reserving their brine as it may still be useful, and sauté for another 3 minutes. Add the squid and soy sauce. Stir until the sauce evaporates; if it becomes too dry, add a little of the mushroom brine. Then season with pepper, add sour cream, mix well, and remove from heat.
