American cheesecake with bananas
Ingredients
- Semi-soft cream cheese 30 oz
- Raisins 3 tablespoons
- Irish Whiskey 2 tablespoons
- Sponge Cake Base 1 piece
- Sugar 10 oz
- Corn Starch 4 tablespoons
- Vanilla extract 1½ teaspoons
- Lemon 2 pieces
- Farm fresh eggs 3 pieces
- 10% cream 10 fl oz
- Bananas 10 pieces
- Butter 0 oz
- Maple syrup to taste
- Peppermint leaves to taste
Step-by-Step Guide
Step 1
Place the raisins in a small bowl and soak them in whiskey or bourbon for 15–20 minutes. Grease a 25 cm springform pan with butter. Preheat the oven to 355°F.
Step 2
Place the cake base disk at the bottom of the pan. Drain the raisins and sprinkle the remaining alcohol over the cake base. Mix 200 g of sugar with cornstarch.
Step 3
Peel 10 small bananas. Melt the butter and 2 tablespoons of sugar in a pan, and sauté the bananas until they are coated with a caramel crust. Let cool and slice into rounds.
Step 4
In another bowl, add the cream cheese, vanilla, lemon zest, lemon juice, raisins, eggs, and cream. Mix well, add the dry ingredients and half of the bananas, combine everything, and pour the mixture into the pan.
Step 5
Pour 2–3 mm of warm water into the baking tray and place the pan on it (the water will create steam during baking). Bake for 50 minutes to 1 hour until golden. The filling in the center should remain slightly liquid. Remove from the oven and let cool without removing from the pan.
Step 6
Remove the cheesecake from the pan, cut into pieces, garnish with the remaining bananas, drizzle with maple syrup or honey, and serve. You can decorate with mint leaves.
