Ingredients
- Butter 5 oz
- Wheat Flour 10 oz
- Sugar 5 oz
- Farm fresh eggs 5 pieces
- Lemon 1 piece
- Chopped almonds 0 oz

- Donut Peaches 6 pieces
- Ocean salt to taste
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
In 200 grams of flour, rub in 100 grams of diced butter, add salt, 85 grams of sugar, 3 egg yolks, the zest of 1 lemon, and knead into an elastic dough. Shape the dough into a log, wrap it in plastic wrap, and refrigerate for 1 hour.
Step 2
Place the chilled dough, cut into thin strips, into a greased and floured baking dish and return to the refrigerator.
Step 3
In a food processor, grind 50 grams of almonds and 50 grams of sugar, add 50 grams of flour and 50 grams of chopped butter — the mixture should resemble bread crumbs. Add one whole egg and one egg yolk, and mix until a creamy consistency is achieved. Finally, add 50 grams of crushed amaretti cookies, mix well, and chill.
Step 4
Dip 5–6 peaches first in hot water, then in cold water, which will help easily remove the skin and pit. Sprinkle the peeled peaches with 2 tablespoons of sugar and let sit for five minutes.
Step 5
Spread the filling over the dough, placing peach halves cut side down on top, and sprinkle with 2 tablespoons of almond flakes.
Step 6
Bake for 20–25 minutes in a preheated oven at 355°F. Dust the finished pie with powdered sugar.
