
Ajvar — Sweet Pepper Spread

Description
Olive oil is better than sunflower oil; it will release the aromas of garlic and peppers without a metallic taste. Instead of garlic, you can add red hot pepper.
Ingredients
- Sweet Pepper 0 lbs
- Garlic 3 cloves
- Olive Oil 2 tablespoons
- Salt a pinch
- Sugar a pinch
- Vinegar 1 teaspoon
Step-by-Step Guide
Step 1
Wash the sweet peppers. Without cutting, place them on a baking sheet. Roast at 390°F, turning occasionally. Roast until the sides are blackened.
Step 2
Allow the peppers to cool.
Step 3
Peel the peppers from the skin, seeds, and stems. Ideally, let them sit overnight to allow moisture to evaporate.
Step 4
Blend the pepper flesh with a blender. Add the garlic and blend as well.
Step 5
Transfer to a pot, add salt, sugar, and oil. Cook in a heavy-bottomed pot until the volume reduces by three times.
Step 6
Add the vinegar and jar it. If you do not plan to jar it, adding vinegar is optional.
