Airy Shrimp Puree Soup
Ingredients
- Peeled Cooked Shrimp 20 oz
- Chicken Broth 0 qt
- Passata Tomato Sauce 5 tablespoons
- Broccoli 10 pieces
- Salad Potatoes 3 pieces
- Young zucchini 1 piece
- 10% cream 10 fl oz
- Carrot 1 piece
- Onion 1 piece
- Mild Chili Spice a pinch
Step-by-Step Guide
Step 1
Cook the broth (any kind will do).
Step 2
Chop the onion, carrot, zucchini, and potatoes.
Step 3
Sauté the onion in a small amount of olive oil until golden, add the carrot, and fry for about 5–7 minutes, then pour in half a glass of water/broth and simmer. At the end, add the tomato paste, mix, and let it rest.
Step 4
Add the potatoes to the boiling broth, after 5 minutes add the broccoli, and after another 5 minutes add the zucchini.
Step 5
Add the sautéed mixture with tomato paste and cook for another 15 minutes.
Step 6
Add spices to taste (I use natural spices by weight).
Step 7
Let the soup cool for about 10 minutes, then puree it to the desired consistency. For the presentation to be similar to the photo, the consistency should be like 10% sour cream.
Step 8
Before serving, whip the cream to peaks, pour it into the bowl, then pour the soup on top, sprinkle with ground chili pepper, add Provençal herbs, and top with boiled shrimp.
