Ingredients
- Milk 30 fl oz
- Water 10 fl oz
- Salt a pinch
- Egg white 6 pieces
- Cream of tartar a pinch
- Sugar 5 oz
- Ground Nutmeg to taste
Step-by-Step Guide
Step 1
In a saucepan, bring the milk and water to a boil, then reduce the heat so that the mixture is barely simmering.
Step 2
In a bowl, beat the egg whites, salt, and cream of tartar with a mixer. Then, gradually add the sugar, one tablespoon at a time, while continuously beating. Continue to beat for another 8–10 minutes until stiff peaks form.
Step 3
In the hot milk, place about 3 tablespoons of the egg white mixture, shaping them into boats with 2 tablespoons. Cook each for 2 minutes, then carefully flip and cook for another 1.5 minutes. Use a slotted spoon to transfer to a plate.
Step 4
To serve, pour pink syrup into a deep plate (see note), place 2 meringues in each, and sprinkle with nutmeg.
