- Chicken Liver 0 lbs
- Onion 5 oz
- Garlic 0 oz
- Cream 5 fl oz
- Nutmeg ½ spoons
- Ground coriander ½ spoons
- Butter 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare the ingredients.
Step 2
Clean the liver of any blood clots and white residue.
Step 3
Blend it with a blender until it reaches a creamy consistency.
Step 4
Sauté finely chopped onion and garlic in butter, along with a pinch of nutmeg and coriander.
Step 5
Add the cream to the skillet and keep it over low heat until it thickens to form a sauce, then gently simmer everything together.

When the contents of the skillet have cooled slightly, combine them in a blender with the puréed liver.

Add salt and pepper to taste, along with 50 grams of softened butter. Mix well.
Step 8
Pour the mixture into a tall terrine or loaf pan.

Cover it with foil, place the dish in a tray filled with boiling water.
Step 10
Place everything in the oven preheated to 250°F for 1 hour and 10 minutes.

Chill and serve.
